- 3 ripe bananas
- 1/3 cup melted butter
- 1/2 teaspoon baking soda
- 1 pinch of salt
- 3/4 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease a 4×8-inch loaf pan with butter or a light coating of oil.
- In a large mixing bowl, peel the ripe bananas and mash them with a fork or a potato masher until they are mostly smooth with just a few small chunks.
- Pour the melted butter over the mashed bananas and stir well with a wooden spoon or spatula.
- Mix in the baking soda and the pinch of salt. Stir until combined.
- Add the sugar, the beaten egg, and the vanilla extract. Mix the ingredients until the batter looks consistent.
- Gently stir in the all-purpose flour. Mix only until the white streaks of flour disappear; do not overmix, or the bread will be tough.
- Pour the batter into your prepared loaf pan and smooth the top with your spoon.
- Bake for 50 to 60 minutes. To check if it is done, insert a toothpick into the center; it should come out clean or with just a few moist crumbs.
- Remove the pan from the oven and let the bread cool in the pan for about 10 minutes.
- Transfer the loaf to a wire rack to cool completely before slicing.
