Ingredients

- 1 lb ground beef or turkey
- 1 cup breadcrumbs
- 1/4 cup BBQ sauce
- 1 egg
- 2 sweet potatoes, diced
- 2 cups broccoli florets
- 1 cup quinoa
- 2 avocados
- 1/2 cup Greek yogurt or sour cream
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine ground beef or turkey, breadcrumbs, BBQ sauce, egg, salt, and pepper. Form meatballs and place on a baking sheet.
- Dice the sweet potatoes and toss with olive oil, salt, and pepper. Spread out on another baking sheet.
- Bake the meatballs and sweet potatoes in the oven for 20-25 minutes, until cooked through and tender.
- While baking, cook the quinoa according to package instructions.
- Steam or roast the broccoli until tender.
- In a blender, combine the avocados and Greek yogurt (or sour cream) to create a creamy sauce, seasoning to taste.
- Assemble bowls with quinoa as the base, topped with meatballs, sweet potatoes, broccoli, and avocado sauce.
Notes
These bowls are customizable; adjust vegetables and proteins as desired. Store components separately to maintain freshness.
