Description

Delightful and satisfying meatball bowls with sweet potatoes, broccoli, and a creamy avocado sauce served over quinoa.


Ingredients

  • 1 lb ground beef or turkey
  • 1 cup breadcrumbs
  • 1/4 cup BBQ sauce
  • 1 egg
  • 2 sweet potatoes, diced
  • 2 cups broccoli florets
  • 1 cup quinoa
  • 2 avocados
  • 1/2 cup Greek yogurt or sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine ground beef or turkey, breadcrumbs, BBQ sauce, egg, salt, and pepper. Form meatballs and place on a baking sheet.
  3. Dice the sweet potatoes and toss with olive oil, salt, and pepper. Spread out on another baking sheet.
  4. Bake the meatballs and sweet potatoes in the oven for 20-25 minutes, until cooked through and tender.
  5. While baking, cook the quinoa according to package instructions.
  6. Steam or roast the broccoli until tender.
  7. In a blender, combine the avocados and Greek yogurt (or sour cream) to create a creamy sauce, seasoning to taste.
  8. Assemble bowls with quinoa as the base, topped with meatballs, sweet potatoes, broccoli, and avocado sauce.

Notes
