Blackstone Cowboy Dinner

  • 1 lb ground beef (80/20 blend works best)
  • 12 oz beef smoked sausage, sliced into rounds
  • 3 large russet potatoes, washed and cut into 1/2-inch cubes
  • 1 large yellow onion, diced
  • 1 green bell pepper, diced
  • 1 cup sweet corn (fresh, canned, or frozen)
  • 3 tablespoons vegetable oil or melted beef tallow
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your Blackstone griddle to medium-high heat. Ensure the surface is clean and ready for cooking.
  2. Spread 2 tablespoons of oil over one side of the griddle. Place the cubed potatoes onto the hot oil. Cover them with a griddle dome if you have one to help them soften faster. Flip them occasionally until they are golden brown and tender, about 10-12 minutes.
  3. While the potatoes cook, add the remaining tablespoon of oil to the other side of the griddle. Place the ground beef and sliced beef sausage on the surface.
  4. Use your metal spatulas to break the ground beef into small chunks. Cook the beef and sausage until the ground beef is fully browned and the sausage slices have a nice sear.
  5. Add the diced onion, bell pepper, and corn to the meat mixture. Sauté the vegetables for about 3-5 minutes until the onions become translucent and the peppers soften.
  6. Slide the cooked potatoes over to the meat and vegetable mixture. Toss everything together using your spatulas.
  7. Sprinkle the salt, pepper, garlic powder, smoked paprika, and onion powder over the entire mixture. Continue to toss and turn the food for another 2-3 minutes so the flavors meld together.
  8. Check that the beef is cooked through and the potatoes are crispy. Remove the dinner from the griddle and place it into a large serving bowl or individual plates.
  9. Garnish with fresh parsley if desired and serve immediately while hot.
