- 2 Chicken breasts
- 2 Jalapeños
- 1 cup Corn (fresh or frozen)
- 2 tbsp Lime juice
- 2 tbsp Olive oil
- 1 tsp Garlic powder
- 1 tsp Cumin
- 1 tsp Salt
- 1/2 tsp Pepper
- Fresh herbs (like cilantro or parsley) for garnish
Instructions
- Preheat the Blackstone griddle or grill.
- Mix olive oil, lime juice, garlic powder, cumin, salt, and pepper to create a marinade.
- Add the chicken breasts and jalapeños to the marinade, coating them well.
- Place the marinated chicken on the hot griddle and cook for about 5-7 minutes on each side or until fully cooked.
- Add the corn to the griddle and char it for a few minutes until it’s heated through and slightly browned.
- Serve the chicken and corn with rice, tortillas, or a salad. Garnish with fresh herbs and additional lime juice if desired.
Notes
For extra flavor, marinate the chicken overnight. Remove jalapeño seeds for a milder dish.
