Ingredients

  • 2 cups corn kernels (fresh or frozen)

  • 1/2 cup mayonnaise
  • 1 tablespoon lemon juice

Instructions

  1. Cook the orzo pasta according to package instructions and drain.
  2. Heat olive oil in a pan and add the corn kernels, charring them over medium-high heat until slightly blackened.
  3. Combine the cooked orzo, charred corn, scallions, and dill in a mixing bowl.
  4. Mix the mayonnaise, lemon juice, salt, and pepper in a separate bowl to create the dressing.
