Ingredients
Scale
- 1.5 lbs lean ground beef
- 1 medium yellow onion, diced
- 4 large Russet potatoes, peeled and thinly sliced
- 1 can (10.5 oz) condensed cream of mushroom soup
- 1/2 cup whole milk
- 2 cups sharp cheddar cheese, shredded
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon paprika
- Non-stick cooking spray
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with non-stick cooking spray. Peel your potatoes and slice them into thin rounds, about 1/8-inch thick. Slicing them thinly ensures they cook through at the same rate as the rest of the casserole.
- Place a large skillet over medium-high heat. Add the ground beef and diced onions. Cook until the beef is fully browned and the onions are translucent and soft. Drain off any excess grease from the skillet to prevent the casserole from becoming oily. Season the meat mixture with salt, pepper, and garlic powder.
- In a medium mixing bowl, whisk together the condensed cream of mushroom soup and the milk until smooth. This mixture will act as the sauce that binds the potatoes and meat together while adding a rich, savory depth to every bite.
- Place half of the sliced potatoes in an even layer at the bottom of the prepared baking dish. Spread the browned beef and onion mixture over the potatoes. Top with the remaining sliced potatoes. Pour the soup and milk mixture evenly over the top, using a spatula to spread it to the edges. Sprinkle the paprika over the top for color.
- Cover the baking dish tightly with aluminum foil. Place it in the oven and bake for 35 to 40 minutes, or until the potatoes are fork-tender. Remove the foil and sprinkle the shredded cheddar cheese evenly over the top. Return the dish to the oven, uncovered, for an additional 5 to 7 minutes until the cheese is melted and bubbly.
- Remove the casserole from the oven and let it sit for about 5 minutes before serving. This resting period allows the sauce to thicken slightly, making it easier to scoop and serve. Garnish with fresh parsley or green onions if desired.
- Cook Time: 60 minutes
