  • 2 cups green cabbage, very finely shredded
  • 1/2 cup green onions, thinly sliced
  • 2 tablespoons soy sauce (ensure it is halal-certified)
  • 1 tablespoon fresh ginger, minced
  • 3 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon salt
  • 1 package round dumpling wrappers (approximately 40–50 wrappers)
  • Small bowl of water (for sealing)
  • Vegetable oil (for frying)

Instructions

  1. Place the shredded cabbage in a colander and sprinkle with a pinch of salt. Let it sit for 10 minutes, then squeeze out the excess moisture with your hands. This prevents the dumplings from becoming watery.
  2. In a large mixing bowl, combine the ground chicken, squeezed cabbage, green onions, soy sauce, minced ginger, garlic, sesame oil, and black pepper.
  3. Mix the ingredients thoroughly using a spoon or your hands until the mixture is slightly sticky and well-combined.
  4. Take one dumpling wrapper and place it in the palm of your hand. Put about one tablespoon of the chicken mixture in the center of the wrapper.
  5. Dip your finger in the bowl of water and run it along the outer edge of the wrapper to moisten it.
  6. Fold the wrapper in half over the filling. Press the edges together firmly to seal. You can make small pleats along the edge for a traditional look or simply press it flat.
  7. Repeat the process until all the filling is used. Keep the finished dumplings on a tray dusted with a little flour to prevent sticking.
  8. To steam: Line a steamer basket with parchment paper or extra cabbage leaves. Place dumplings inside, leaving space between them. Steam over boiling water for 10-12 minutes until the chicken is fully cooked.
  9. To pan-fry: Heat 1 tablespoon of vegetable oil in a large non-stick skillet over medium heat. Place dumplings in the pan and cook for 2 minutes until the bottoms are golden brown. Pour in 1/4 cup of water and immediately cover with a lid. Steam for 6-8 minutes until the water has evaporated and the wrappers are translucent.
  10. Remove from heat and serve immediately while hot.
