- 2 cups old-fashioned rolled oats (do not use instant oats)
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cups milk (dairy or almond milk works well)
- 1 large egg
- 1/4 cup maple syrup or honey
- 2 tablespoons melted butter or coconut oil
- 1 teaspoon pure vanilla extract
- 2 large apples, peeled and diced into small chunks
- 1/2 cup chopped walnuts or pecans (optional for crunch)
Instructions
- Preheat your oven to 375°F (190°C). Grease an 8×8-inch baking dish with a little butter or oil.
- In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir well to make sure the spices are even.
- In a medium bowl, whisk together the milk, egg, maple syrup, melted butter, and vanilla extract until smooth.
- Pour the wet ingredients into the bowl with the oats. Stir until everything is well combined.
- Gently fold in the diced apples and the chopped nuts if you are using them.
- Pour the mixture into your prepared baking dish. Spread it out evenly with a spoon.
- Bake for 35 to 40 minutes. The top should be golden brown and the oatmeal should feel set in the center.
- Remove from the oven and let it cool for about 5 minutes before slicing and serving.
