- 1 cup uncooked quinoa (any color)
- 2 cups water or milk (dairy or almond milk work great)
- 2 medium apples, cored and diced into small pieces
- 1 teaspoon ground cinnamon
- 2 tablespoons maple syrup or honey
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
- Optional: 1/4 cup chopped walnuts or pecans for crunch
- Optional: A splash of extra milk for serving
Instructions
- Place the quinoa in a fine-mesh strainer and rinse it under cold water for 30 seconds. This step is important to remove the natural coating that can taste bitter.
- In a medium saucepan, combine the rinsed quinoa, 2 cups of milk or water, and the salt.
- Bring the mixture to a boil over medium-high heat.
- Once boiling, turn the heat down to low and cover the pot with a lid. Let it simmer for about 10 minutes.
- Open the lid and stir in the diced apples and ground cinnamon. Cover again and continue to simmer for another 5 to 8 minutes, or until the liquid is fully absorbed.
- Remove the pan from the heat. Stir in the maple syrup and vanilla extract.
- Let the quinoa sit, covered, for 5 minutes. This makes it extra fluffy.
- Fluff the quinoa with a fork.
- Spoon the mixture into bowls. Top with chopped nuts if you like and add an extra splash of milk on top. Serve warm.
