Cinnamon Roll Protein Baked Oats

Ingredients

  • 1/2 cup rolled oats (old-fashioned oats)
  • 1 scoop (approx. 30g) vanilla protein powder
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • A pinch of salt
  • 1/2 medium banana, mashed (or 1/4 cup unsweetened applesauce)
  • 1/2 cup milk of your choice (dairy, almond, or soy)
  • 1 teaspoon maple syrup or honey
  • 1/4 teaspoon vanilla extract
  • For the Glaze: 1 tablespoon Greek yogurt mixed with 1 teaspoon maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease a small oven-safe ramekin or baking dish with a little oil or butter.
  2. In a blender, combine the oats, protein powder, baking powder, cinnamon, and salt. Pulse until the oats look like a coarse flour.
  3. Add the mashed banana, milk, maple syrup, and vanilla extract to the blender. Blend on high for 20-30 seconds until the batter is smooth and creamy.
  4. Pour the batter into your prepared baking dish. If you want an extra cinnamon swirl, mix a tiny bit of cinnamon and maple syrup in a separate bowl and swirl it into the top of the batter with a toothpick.
  5. Place the dish in the oven and bake for 20 to 25 minutes. The top should be firm to the touch and slightly golden.
  6. While the oats bake, stir together the Greek yogurt and maple syrup in a small bowl to create the glaze.
  7. Remove the oats from the oven and let them cool for 2 minutes. Drizzle the glaze over the top while they are still warm so it seeps into the oats. Serve immediately.
