- 1 package (8.5 ounces) corn muffin mix
- 1 can (15 ounces) whole kernel corn, drained
- 1 can (14.75 ounces) cream-style corn
- 1 cup sour cream
- 1/2 cup unsalted butter, melted
- 1 1/2 cups sharp cheddar cheese, shredded
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with cooking spray or butter.
- In a large mixing bowl, combine the corn muffin mix, drained whole kernel corn, and cream-style corn.
- Add the sour cream and melted butter to the bowl. Stir until everything is well combined.
- Fold in 1 cup of the shredded cheddar cheese, salt, and black pepper. Stir gently so the cheese is evenly spread.
- Pour the mixture into your prepared baking dish and spread it out evenly with a spatula.
- Bake for 40 to 45 minutes. The center should be set but still slightly jiggle.
- Sprinkle the remaining 1/2 cup of cheddar cheese over the top of the casserole.
- Bake for another 5 to 10 minutes until the cheese is melted and bubbly and the edges are golden brown.
- Remove from the oven and let it sit for 5 to 10 minutes before serving. This helps the casserole set properly.
