- 1 pound lean ground beef
- 1 medium yellow onion, finely diced
- 1 packet (1 ounce) taco seasoning
- 1/4 cup water
- 2 cups small-curd cottage cheese
- 1 cup chunky salsa (mild, medium, or hot)
- 2 cups shredded Mexican blend cheese or sharp cheddar
- 2 cups corn tortilla chips, slightly crushed
- 1 can (4 ounces) diced green chilies, drained
- Optional toppings: Diced tomatoes, sliced black olives, fresh cilantro, or shredded lettuce
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish with olive oil or non-stick cooking spray.
- Place a large skillet over medium-high heat. Add the ground beef and diced onion. Cook until the beef is fully browned and the onions are soft, breaking the meat apart with a spoon as it cooks. Drain any excess fat from the skillet.
- Stir in the taco seasoning and 1/4 cup of water. Let it simmer for 2 to 3 minutes until the liquid has thickened and the meat is well-coated. Remove from heat.
- In a medium mixing bowl, combine the cottage cheese, salsa, and drained green chilies. Stir well until the mixture is uniform.
- Spread the crushed tortilla chips in an even layer at the bottom of the prepared baking dish.
- Spoon the seasoned beef mixture evenly over the tortilla chips.
- Carefully spread the cottage cheese and salsa mixture over the beef layer using a spatula.
- Sprinkle the shredded cheese evenly over the top of the casserole.
- Bake in the preheated oven for 20 to 25 minutes, or until the cheese is melted and bubbling at the edges.
- Remove from the oven and let it rest for 5 minutes before slicing and serving with your favorite fresh toppings.
