Creamy Chicken and Wild Rice Soup

  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup uncooked wild rice blend
  • 1 medium yellow onion, diced
  • 3 medium carrots, peeled and sliced into rounds
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 6 cups halal chicken broth
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt (adjust to taste)
  • 1/2 teaspoon black pepper
  • 4 tablespoons unsalted butter
  • 1/4 cup all-purpose flour
  • 1 1/2 cups heavy cream or half-and-half
  • 2 cups fresh spinach (optional, for extra greens)

Instructions

  1. Melt 2 tablespoons of butter in a large pot or Dutch oven over medium heat. Add the onion, carrots, and celery. Sauté for about 5 to 7 minutes until the vegetables are soft.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Stir in the chicken pieces, wild rice, chicken broth, thyme, rosemary, salt, and pepper. Bring the mixture to a boil.
  4. Reduce the heat to low, cover the pot, and let it simmer for 40 to 45 minutes. The rice should be tender and the chicken cooked through.
  5. In a small saucepan, melt the remaining 2 tablespoons of butter over medium heat. Whisk in the flour and cook for 1 minute to create a roux.
  6. Slowly whisk the heavy cream into the roux until smooth and thickened. This creates a “cream base.”
  7. Pour the cream mixture into the large soup pot. Stir well to combine everything.
  8. If using spinach, stir it in now and let it wilt for 2 minutes.
  9. Taste the soup and add more salt or pepper if needed. Serve hot.
