- 2 tablespoons butter
- 1 tablespoon olive oil
- 1.5 pounds boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 large yellow onion, finely diced
- 3 large carrots, peeled and sliced into rounds
- 3 stalks celery, sliced
- 6 cloves garlic, minced
- 1 cup wild rice blend (not instant rice)
- 6 cups halal chicken broth
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon salt (plus more to taste)
- 1/2 teaspoon black pepper
- 1/4 cup all-purpose flour
- 1.5 cups heavy cream
- 2 cups fresh baby spinach (optional)
Instructions
- Place a large pot or Dutch oven over medium-high heat. Add the olive oil. Once hot, add the chicken pieces. Cook until they are golden brown on all sides. Remove the chicken from the pot and set it aside on a plate.
- In the same pot, melt the butter. Add the diced onion, carrots, and celery. Sauté for about 5 to 7 minutes until the onions look translucent and the vegetables start to soften.
- Stir in the minced garlic. Cook for only 1 minute. You want the garlic to smell amazing but not turn brown or bitter.
- Add the wild rice blend, dried thyme, rosemary, salt, and pepper. Stir well to coat the rice in the butter and garlic.
- Pour in the chicken broth. Use a wooden spoon to scrape any brown bits off the bottom of the pot. These bits hold a lot of flavor!
- Bring the liquid to a rolling boil. Once boiling, turn the heat down to low. Cover the pot with a lid.
- Let the soup simmer for 40 to 45 minutes. Check the rice; it should be tender and some grains should be slightly split open.
- While the soup simmers, whisk the flour into the heavy cream in a small bowl until no lumps remain.
- Stir the cooked chicken and the cream mixture into the pot. Let it cook uncovered for another 5 to 10 minutes. The soup will thicken beautifully during this time.
- If you are using spinach, stir it in at the very end until it wilts. Taste the soup and add more salt or pepper if you like. Serve hot.
