- 1 lb white fish fillets (such as Cod, Tilapia, or Halibut), cut into 1-inch cubes
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 tablespoons butter
- 1 tablespoon olive oil
- 2 tablespoons fresh lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons fresh parsley, finely chopped
Instructions
- Use paper towels to pat the fish fillets completely dry. This is very important for a crispy texture. Cut the fish into 1-inch bite-sized pieces.
- In a shallow bowl or a zip-top bag, combine the flour, garlic powder, paprika, salt, and black pepper. Mix well.
- Toss the fish pieces in the seasoned flour until every side is coated. Shake off any extra flour so the coating isn’t too thick.
- Place a large skillet over medium-high heat. Add the olive oil and 1 tablespoon of the butter. Let the butter melt and start to bubble.
- Add the fish bites to the skillet in a single layer. Do not crowd the pan; cook in batches if needed. Fry for 3 to 4 minutes, turning once, until the fish is golden brown and cooked through.
- Remove the skillet from the heat or turn the heat to very low. Add the remaining 2 tablespoons of butter, the lemon juice, and the lemon zest to the pan.
- Gently toss the fish bites in the melting lemon butter for about 30 seconds until they are well glazed.
- Sprinkle with fresh parsley and serve immediately while hot and crispy.
