Description

A quick and delicious meal featuring chicken and mixed vegetables, served over rice or pasta, perfect for busy weeknights.


Ingredients

  • 1 pound chicken breast, diced
  • 2 cups mixed vegetables (carrots, bell peppers, broccoli)
  • 2 cups cooked rice or pasta
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce or teriyaki sauce
  • Salt and pepper to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the diced chicken breast and cook until browned, about 5-7 minutes.
  3. Add the mixed vegetables and cook for another 3-5 minutes until they are tender.
  4. Stir in the cooked rice or pasta, soy sauce, salt, and pepper.
  5. Cook for an additional 2-3 minutes, stirring well to combine.
  6. Serve warm.

Notes

Serve with a light green salad or sprinkle with sesame seeds for extra flavor. Can be made vegetarian by swapping chicken for tofu.
