  • 2 pounds baby potatoes, halved
  • ½ cup crumbled feta cheese
  • ¼ cup olive oil
  • 1 lemon, juiced and zested
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the halved baby potatoes, olive oil, minced garlic, lemon juice, oregano, salt, and pepper in a large bowl. Toss until the potatoes are well-coated.
  3. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast the potatoes for 25-30 minutes, flipping halfway through, until they are golden brown and tender.
  5. Remove from the oven and sprinkle crumbled feta cheese over the hot potatoes. Return to the oven for an additional 5 minutes.
  6. Garnish with fresh parsley and lemon zest, and serve warm.
