- 1.5 lbs chicken breast or thighs, cut into bite-sized pieces
- 2 cups long-grain white rice (basmati or jasmine work great)
- 4 cups chicken broth (halal-certified)
- 4 tablespoons unsalted butter, divided
- 2 tablespoons olive oil
- 6 cloves garlic, finely minced
- 1 teaspoon salt (adjust to taste)
- 1/2 teaspoon black pepper
- 1 teaspoon paprika
- 1/2 teaspoon dried oregano
- 2 tablespoons fresh parsley, chopped
- Lemon wedges for serving
Instructions
- In a medium bowl, toss the chicken pieces with salt, pepper, paprika, and oregano until evenly coated.
- Heat a large skillet or pot over medium-high heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter.
- Once the butter is melted and bubbling, add the chicken in a single layer. Sear for 3-4 minutes per side until golden brown and cooked through. Remove the chicken from the pan and set it aside on a plate.
- In the same pan, add another tablespoon of butter and the remaining olive oil. Stir in the minced garlic and cook for about 30 seconds until fragrant.
- Add the dry rice to the pan. Stir the rice for 1-2 minutes to toast it slightly and coat it in the garlic butter.
- Pour in the chicken broth. Bring the liquid to a boil, then reduce the heat to low. Cover the pan with a tight-fitting lid.
- Simmer the rice for 15-18 minutes, or until the liquid is fully absorbed and the rice is tender.
- Turn off the heat. Place the cooked chicken back into the pan on top of the rice. Add the remaining 2 tablespoons of butter and the fresh parsley.
- Cover the pan again and let it sit for 5 minutes. This allows the butter to melt and the chicken to heat through.
- Fluff the rice with a fork, mixing the chicken and butter throughout. Serve warm with lemon wedges on the side.
