Garlic Butter Steak Bites

  • 1.5 lbs Sirloin steak, Ribeye, or New York Strip (cut into 1-inch cubes)
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 teaspoon salt (or to taste)
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon dried oregano or thyme
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Start by patting the steak cubes dry with a paper towel. This is a very important step to get a good sear.
  2. In a medium bowl, toss the steak cubes with salt, pepper, and dried oregano until evenly coated.
  3. Place a large cast-iron skillet or heavy frying pan over high heat. Add the olive oil and wait until it is shimmering and just starting to smoke.
  4. Add the steak bites to the pan in a single layer. Do not crowd the pan; cook in two batches if necessary.
  5. Let the steak sear undisturbed for about 2 minutes to develop a dark brown crust.
  6. Flip the pieces and cook for another 1 to 2 minutes until browned on all sides.
  7. Reduce the heat to medium-low. Add the butter and the minced garlic to the pan.
  8. Stir the steak bites constantly for about 1 minute so the garlic becomes fragrant and the butter coats every piece of meat. Be careful not to burn the garlic.
  9. Remove the pan from the heat immediately. Garnish with fresh parsley and serve warm.
