- 1.5 lbs chicken breasts or thighs, cut into bite-sized pieces
- 1 lb red or yellow potatoes, scrubbed and cubed
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional for a tiny kick)
- Fresh parsley for garnish
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a large baking sheet or a 9×13 inch baking dish with olive oil.
- In a large mixing bowl, combine the cubed potatoes, olive oil, minced garlic, half of the parmesan cheese, oregano, parsley, salt, and pepper. Toss well to coat every piece.
- Spread the potatoes in a single layer on the prepared baking sheet. Place them in the oven and roast for 15 minutes.
- While the potatoes are roasting, take the chicken pieces and toss them in the same bowl with the remaining parmesan cheese and a little extra olive oil if needed.
- Remove the baking sheet from the oven. Move the potatoes to the sides and place the chicken pieces in the center.
- Return the pan to the oven and bake for another 20 to 25 minutes. Ensure the chicken is cooked through and the potatoes are tender and golden.
- Turn the broiler on for the last 2 to 3 minutes if you want the cheese to be extra crispy and brown.
- Remove from the oven, garnish with fresh parsley, and serve immediately while hot.
