- 1.5 lbs chicken breasts or thighs, cut into bite-sized pieces
- 1 lb baby potatoes, halved or quartered
- 3 tablespoons olive oil
- 2 tablespoons butter, melted
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh parsley, chopped (for garnish)
- 1/2 teaspoon paprika
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a large baking sheet or baking dish with oil.
- Wash the potatoes and cut them into small, uniform pieces. If using large potatoes, cut them into 1-inch cubes.
- In a large mixing bowl, combine the olive oil, melted butter, minced garlic, Parmesan cheese, oregano, salt, pepper, and paprika.
- Add the chicken pieces and the cut potatoes to the bowl. Toss everything thoroughly until the chicken and potatoes are evenly coated with the garlic and cheese mixture.
- Spread the mixture onto the prepared baking sheet in a single layer. Try to leave a little space between the pieces so they roast instead of steaming.
- Place the sheet in the oven and bake for 30 to 35 minutes. Halfway through the cooking time, use a spatula to toss the chicken and potatoes so they brown evenly.
- Check the chicken to ensure it is cooked through (internal temperature of 165°F) and the potatoes are soft on the inside.
- Remove from the oven and sprinkle with fresh parsley and a little extra Parmesan cheese if desired. Serve hot.
