- 2 cups old-fashioned rolled oats (do not use instant or steel-cut)
- 1/2 cup chopped pecans or walnuts
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground cloves
- 1/4 teaspoon salt
- 2 cups milk (dairy or unsweetened almond/oat milk)
- 1/4 cup unsulphured molasses
- 2 tablespoons maple syrup
- 1 large egg
- 1 teaspoon vanilla extract
- 2 tablespoons melted butter or coconut oil
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 2-quart baking dish or an 8×8-inch square pan with a little bit of butter or oil.
- In a large mixing bowl, combine the rolled oats, chopped nuts, baking powder, ginger, cinnamon, cloves, and salt. Stir well so the spices coat all the oats.
- In a medium bowl, whisk together the milk, molasses, maple syrup, egg, vanilla extract, and melted butter until the mixture is smooth and the molasses is fully dissolved.
- Pour the wet ingredients over the dry oat mixture. Stir gently until everything is well combined.
- Pour the oatmeal mixture into your prepared baking dish. Use a spatula to spread it out evenly.
- Place the dish in the oven and bake for 35 to 40 minutes. You will know it is done when the top looks set and golden brown, and the edges are slightly pulling away from the sides.
- Remove from the oven and let it cool for at least 5 to 10 minutes. This helps the oatmeal set so it is easier to slice and serve.
