Ground Turkey Sweet Potato Bake – Healthy Family Dinner Recipe

Ground Turkey Sweet Potato Bake – Healthy Family Dinner Recipe

  • Total Time: 50 minutes
  • Diet: Healthy, Dairy-Free (optional)

Ingredients

Scale
  • 1 lb ground turkey (93% lean is best)
  • 2 large sweet potatoes, peeled and cut into 1/2-inch cubes
  • 1 large bell pepper (any color), diced
  • 1 small yellow onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste
  • 1/2 cup shredded cheddar or Monterey Jack cheese (optional)
  • Fresh cilantro or green onions for garnish

Instructions

  1. Step 1: Preparation Preheat your oven to 400°F (200°C). Peel the sweet potatoes and chop them into uniform 1/2-inch cubes to ensure they cook evenly. Dice the onion and bell pepper. Lightly grease a large baking dish or deep oven-safe skillet with a drizzle of olive oil or non-stick spray.
  2. Step 2: Sautéing the Base Heat one tablespoon of olive oil in a large skillet over medium-high heat. Add the ground turkey and cook until browned, breaking it into small crumbles with a wooden spoon. Add the chopped onions and bell peppers to the skillet. Continue cooking for 4 to 5 minutes until the vegetables soften. Stir in the minced garlic, chili powder, cumin, smoked paprika, salt, and pepper. Cook for another minute until the spices become fragrant.
  3. Step 3: Baking In your prepared baking dish, combine the spiced turkey mixture with the raw sweet potato cubes. Drizzle the remaining tablespoon of olive oil over the top and toss everything together until the potatoes are well-coated. Spread the mixture in an even layer. Cover the dish tightly with aluminum foil and bake for 20 minutes. Remove the foil and bake for another 10 to 15 minutes, or until the sweet potatoes are fork-tender. If using cheese, sprinkle it over the top during the last 5 minutes of baking until melted and bubbly.
  4. Step 4: Plating Remove the dish from the oven and let it sit for a few minutes to settle. Garnish the bake with fresh cilantro or sliced green onions for a pop of color and freshness. Serve hot in bowls or on plates, perhaps with a side of sliced avocado or a dollop of Greek yogurt for extra creaminess.
