- 1.5 lbs ground turkey
- 3 medium zucchinis, sliced into 1/4-inch rounds
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 2 cups marinara sauce (choose a low-sugar variety for extra health benefits)
- 1.5 cups shredded mozzarella cheese
- 1/2 cup grated parmesan cheese
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon red pepper flakes (optional for a little kick)
- 2 tablespoons olive oil
- Salt and black pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish with olive oil or cooking spray.
- Place the zucchini rounds on a paper towel and sprinkle lightly with salt. Let them sit for 10 minutes, then pat them dry to remove excess moisture.
- In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the diced onion and cook for 3-4 minutes until translucent.
- Add the ground turkey to the skillet. Break it apart with a wooden spoon and cook until it is fully browned. Drain any excess liquid from the pan.
- Stir in the minced garlic, dried oregano, dried basil, red pepper flakes, salt, and pepper. Cook for another minute until the garlic is fragrant.
- Pour the marinara sauce into the skillet with the turkey. Stir well and let it simmer on low heat for about 5 minutes.
- Spread a thin layer of the meat sauce at the bottom of the prepared baking dish.
- Place a layer of zucchini rounds over the sauce, followed by more meat sauce and a sprinkle of mozzarella cheese. Repeat the layers until all ingredients are used, ending with a layer of mozzarella and parmesan cheese on top.
- Cover the dish with foil and bake for 20 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted, bubbly, and slightly golden brown on top.
- Let the casserole rest for 5-10 minutes before slicing. Garnish with fresh parsley and serve warm.
