- 1 lb lean ground beef
- 8 oz pasta (e.g., lasagna noodles, broken into pieces)
- 4 cups rich tomato broth
- 2 cups spinach or kale
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions
- Cook the ground beef in a large pot over medium heat until browned, crumbling it for even cooking. Drain excess fat.
- Add the diced onion and minced garlic, cooking until the onion is tender.
- Pour in the tomato broth and bring to a boil.
- Stir in the broken pasta, dried basil, and oregano. Reduce heat and let simmer until pasta is cooked to your liking.
- Add the spinach or kale, stirring until wilted and incorporated.
- Serve in bowls, topped with ricotta, mozzarella, and Parmesan cheese.
Notes
For a spicier kick, add red pepper flakes during cooking. Leftovers can be stored for 3-4 days in the fridge or frozen for up to 3 months.
