Hearty Beef and Vegetable Soup

Hearty Beef and Vegetable Soup

  • Total Time: 2 hours 5 minutes

Ingredients

Scale
  • 2 lbs beef chuck roast, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 3 large carrots, sliced into rounds
  • 2 stalks celery, sliced
  • 2 large Russet potatoes, peeled and cubed
  • 1 cup frozen peas
  • 1 cup green beans, trimmed and cut
  • 6 cups low-sodium beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 bay leaves
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Pat the beef cubes dry with paper towels and season them generously with salt and pepper. This ensures a better sear and deeper flavor. Chop the onion, garlic, carrots, celery, and potatoes so they are ready to go. Having all your vegetables prepped before you start the stove prevents burning and keeps the cooking process smooth and stress-free.
  2. Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the beef in batches, browning each side until a dark crust forms. Remove the beef and set it aside. In the same pot, add the onion, carrots, and celery. Sauté for 5-7 minutes until the onions become translucent. Stir in the garlic and tomato paste, cooking for another minute until fragrant.
  3. Deglaze the pot by pouring in a splash of beef broth, scraping up the browned bits from the bottom. Return the beef to the pot along with the remaining broth, diced tomatoes, potatoes, thyme, rosemary, and bay leaves. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and simmer for 1 hour and 15 minutes, or until the beef is fork-tender. Stir in the green beans and peas during the last 10 minutes of cooking.
  4. Remove the bay leaves and discard them. Taste the soup and add more salt or pepper if needed. Ladle the hot soup into deep bowls, ensuring everyone gets a party of meat and vegetables. Sprinkle fresh chopped parsley over the top for a pop of color and brightness. Serve immediately with a side of crusty bread or crackers for dipping.
