- 3 large egg whites (at room temperature)
- 1/4 teaspoon cream of tartar
- 1 scoop (approx. 30g) vanilla whey or casein protein powder
- 1 tablespoon granulated stevia or your favorite sugar-free sweetener
- 1/4 cup fresh blueberries
- 1/2 teaspoon vanilla extract
Instructions
- Preheat your oven to 300°F (150°C) and line a large baking sheet with parchment paper.
- In a clean glass or metal bowl, place the egg whites and the cream of tartar.
- Using a hand mixer or stand mixer, beat the egg whites on medium-high speed until stiff peaks form. You will know it is ready when you lift the beaters and the peaks stand straight up without drooping.
- Slowly sprinkle the protein powder and sweetener over the egg whites. Add the vanilla extract.
- Using a rubber spatula, very gently fold the powder into the egg whites. Move in a circular motion from the bottom to the top until just combined. Do not overmix.
- Gently fold in the fresh blueberries.
- Scoop the mixture into 4 to 6 large “clouds” on the prepared baking sheet, leaving space between each one.
- Bake for 20 to 25 minutes, or until the tops are lightly golden brown and firm to the touch.
- Remove from the oven and let them cool completely on the pan. They will slightly deflate as they cool, which is normal.
