- 1 pound extra-lean ground beef (90% or higher)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and freshly ground black pepper to taste
- 4 cups chopped romaine lettuce
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/2 cup dill pickle slices
- 1/2 cup shredded cheddar cheese
- 1 large avocado, sliced
- For the Special Sauce:
- 1/4 cup plain Greek yogurt
- 1 tablespoon yellow mustard
- 1 tablespoon sugar-free ketchup
- 1 teaspoon pickle juice
- 1/2 teaspoon smoked paprika
Instructions
- Place a large skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spatula, until no pink remains.
- Drain any excess fat from the skillet. Stir in the garlic powder, onion powder, salt, and pepper. Continue cooking for 2 more minutes until the beef is slightly browned and crispy.
- While the beef is cooking, prepare the special sauce. In a small bowl, whisk together the Greek yogurt, mustard, ketchup, pickle juice, and smoked paprika until smooth.
- Prepare four large serving bowls. Place 1 cup of chopped romaine lettuce in the bottom of each bowl.
- Divide the cooked ground beef evenly among the four bowls, placing it on top of the lettuce.
- Add the cherry tomatoes, red onion slices, pickles, and shredded cheese to each bowl.
- Finish each bowl with a few slices of fresh avocado.
- Drizzle the creamy special sauce over each bowl and serve immediately.
