Instructions
- Preheat the oven to 400°F (200°C).
- Dice the sweet potatoes and place them on a baking sheet. Drizzle with olive oil and season with salt, pepper, paprika, and garlic powder.
- Bake the sweet potatoes for 25-30 minutes, or until tender.
- While the sweet potatoes are baking, season the chicken breasts with salt, pepper, and any additional spices you prefer.
- Heat a skillet over medium-high heat and cook the chicken for 5-7 minutes on each side, or until fully cooked.
- Steam or sauté the broccoli until bright green and tender.
- Once everything is cooked, assemble the bowls by placing the quinoa or rice at the bottom, followed by the sweet potatoes, chicken slices, and broccoli.
- Garnish with fresh herbs if desired and serve warm.
