High Protein Cranberry Orange Protein Bars

  • Total Time: 1 hour 15 minutes
  • Diet: High-Protein, Gluten-Free, Vegetarian

Ingredients

Scale
  • 2 cups rolled oats (blitzed slightly in a blender)
  • 1 cup vanilla protein powder (whey or plant-based)
  • 1/2 cup almond flour
  • 1/2 cup dried cranberries, chopped
  • 2 tablespoons fresh orange zest
  • 1/2 teaspoon sea salt
  • 1/2 cup creamy almond butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup fresh orange juice
  • 1 teaspoon non-alcoholic vanilla extract

Instructions

  1. Line an 8×8 inch square baking pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a large mixing bowl, whisk together the oats, protein powder, almond flour, and sea salt.
  3. Add the chopped dried cranberries and fresh orange zest to the dry mix and stir well.
  4. In a medium microwave-safe bowl, combine the almond butter and honey. Heat for 20 seconds and stir until completely smooth.
  5. Stir the fresh orange juice and non-alcoholic vanilla extract into the almond butter mixture.
  6. Pour the wet ingredients over the dry ingredients. Use a sturdy spatula to mix until a thick, sticky dough forms.
  7. Transfer the mixture to the prepared baking pan.
  8. Place another piece of parchment paper on top of the dough and press down firmly with your hands or the bottom of a flat glass to create an even layer.
  9. Remove the top piece of parchment and place the pan in the refrigerator for at least one hour to set.
  10. Once firm, lift the bars out using the parchment paper overhang and slice into 10 to 12 rectangular bars.
