Description

These High Protein Egg Breakfast Muffins are packed with nutrients and flavor, providing a satisfying blend of protein and vegetables for a healthy start to your day.


Ingredients

  • 6 large eggs
  • 1 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/2 cup cooked turkey (optional)
  • 1/4 cup shredded cheese (optional)
  • Salt and pepper to taste
  • Cooking spray or muffin liners

Instructions

  1. Preheat the oven to 350°F (175°C). Grease a muffin tin with cooking spray or line with muffin liners.
  2. Whisk the eggs in a large bowl and season with salt and pepper.
  3. Stir in the chopped spinach, bell peppers, turkey (if using), and cheese (if using).
  4. Pour the egg mixture evenly into the muffin tins, filling each about 2/3 full.
  5. Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden.
  6. Allow to cool slightly before removing from the tin.
