- 1 pound ground beef
- 1 cup cooked quinoa or brown rice
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Toppings: diced tomatoes, shredded lettuce, avocado, shredded cheese, salsa
Instructions
- Heat some oil in a large skillet over medium heat. Add the diced onion and bell pepper, and sauté until softened.
- Add the minced garlic and cook for 1 minute until fragrant.
- Add the ground beef, breaking it apart as it cooks. Season with chili powder, cumin, salt, and pepper. Cook until browned.
- Stir in the black beans and corn, cooking until heated through.
- Serve over the cooked quinoa or brown rice, and top with your choice of toppings.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, warm in the microwave or on the stove.
