High Protein Ground Beef Taco Bowls

Delicious and satisfying meal bringing the fun of taco night to your table in a wholesome bowl format. Packed with high-quality protein, fiber, and colorful vegetables.


Ingredients

  • 1 pound ground beef
  • 1 cup cooked quinoa or brown rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Toppings: diced tomatoes, shredded lettuce, avocado, shredded cheese, salsa

Instructions

  1. Heat some oil in a large skillet over medium heat. Add the diced onion and bell pepper, and sauté until softened.
  2. Add the minced garlic and cook for 1 minute until fragrant.
  3. Add the ground beef, breaking it apart as it cooks. Season with chili powder, cumin, salt, and pepper. Cook until browned.
  4. Stir in the black beans and corn, cooking until heated through.
  5. Serve over the cooked quinoa or brown rice, and top with your choice of toppings.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 4 days. To reheat, warm in the microwave or on the stove.
