Description

A comforting beef stew made with tender chunks of beef and hearty vegetables, simmered in a rich broth.


Ingredients

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 4 medium potatoes, diced
  • 3 carrots, sliced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons vegetable oil
  • Crusty bread (for serving)

Instructions

  1. In a large pot, heat the vegetable oil over medium-high heat. Brown the beef in batches, then transfer to a plate.
  2. In the same pot, add the onions and garlic, and sauté until softened.
  3. Stir in the tomato paste, Worcestershire sauce, thyme, salt, and pepper.
  4. Return the beef to the pot and add the broth, potatoes, and carrots.
  5. Bring to a boil, then reduce the heat to low, cover, and simmer for about 120 minutes, or until the beef is tender.
  6. Serve hot with crusty bread.

Notes

For a thicker stew, mix one tablespoon of cornstarch with two tablespoons of cold water and stir it in during the last 20 minutes of simmering.
