- 1 pound high-quality beef sausage, sliced into rounds
- 1 large head of broccoli, cut into small florets
- 2 bell peppers (any color), sliced into strips or chunks
- 1 medium zucchini, sliced into half-moons
- 3 cloves garlic, finely minced
- 1/4 cup honey
- 3 tablespoons soy sauce (low sodium preferred)
- 1 tablespoon olive oil
- 1/2 teaspoon black pepper
- 1/4 teaspoon salt (adjust to taste)
- Optional: Sesame seeds or chopped green onions for garnish
Instructions
- In a small bowl, whisk together the honey, minced garlic, soy sauce, and black pepper. Set this sauce aside for later.
- Heat the olive oil in a large skillet over medium-high heat. Add the beef sausage slices in a single layer. Cook for 3 to 4 minutes per side until they are nicely browned and slightly crispy.
- Remove the sausage from the skillet and set it aside on a plate. In the same skillet, add the broccoli, bell peppers, and zucchini. If the pan looks dry, you can add a tiny splash of water or more oil.
- Sauté the vegetables for about 5 to 7 minutes. You want them to be tender-crisp, meaning they are cooked but still have a little bite and bright color.
- Return the browned beef sausage to the skillet with the vegetables. Stir everything together to combine.
- Pour the honey garlic sauce over the mixture. Stir constantly for 2 to 3 minutes. The sauce will begin to bubble and thicken, coating every piece of sausage and vegetable in a shiny glaze.
- Once the sauce has thickened and everything is well-coated, remove from heat. Garnish with sesame seeds or green onions if you like. Serve immediately while hot.
