Honey Garlic Kielbasa and Veggies – Easy One Pan Dinner

Honey Garlic Kielbasa and Veggies – Easy One Pan Dinner

  • Total Time: 35 minutes
  • Diet: Gluten-Free (option), Low-Carb (option)

Ingredients

Scale
  • 14 oz smoked kielbasa, sliced into 1/2-inch rounds
  • 2 cups broccoli florets
  • 1 red bell pepper, chopped into 1-inch pieces
  • 1 yellow bell pepper, chopped into 1-inch pieces
  • 1 small red onion, cut into wedges
  • 2 tablespoons olive oil
  • 1/4 cup honey
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • Salt and black pepper to taste
  • Sesame seeds and sliced green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or aluminum foil for easy cleanup. Slice the kielbasa into rounds and chop the broccoli, peppers, and onion. In a small glass bowl, whisk together the honey, minced garlic, soy sauce, rice vinegar, and red pepper flakes until the honey fully dissolves into the mixture.
  2. Place the sliced kielbasa and all the chopped vegetables onto the prepared baking sheet. Drizzle with olive oil and a pinch of salt and pepper. Toss them directly on the pan to coat. Pour about two-thirds of the honey garlic sauce over the mixture and toss again until everything is evenly glazed. Spread the ingredients out into a single layer to ensure even roasting. Bake for 20 minutes, tossing halfway through, until the vegetables are tender and the kielbasa is slightly browned and caramelized.
  3. Remove the pan from the oven and drizzle the remaining honey garlic sauce over the hot ingredients for an extra burst of flavor. Garnish with a sprinkle of sesame seeds and fresh green onions. Serve immediately on its own for a low-carb option, or spoon it over a bed of fluffy white rice, quinoa, or cauliflower rice to soak up that delicious sauce.
