- 4 boneless, skinless chicken breasts
- 1/4 cup honey
- 1/4 cup freshly squeezed lime juice
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 avocado, sliced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- Whisk together the honey, lime juice, olive oil, minced garlic, cumin, salt, and black pepper to create the marinade.
- Place the chicken breasts in a resealable plastic bag and pour the marinade over the chicken. Seal the bag and refrigerate for at least 30 minutes.
- Preheat your grill or oven. If grilling, preheat to medium-high heat; if baking, preheat to 400°F (200°C).
- Remove the chicken from the marinade and discard the marinade. Grill the chicken for about 6-7 minutes per side or bake in the oven for about 20-25 minutes until the internal temperature reaches 165°F (75°C).
- Once cooked, let the chicken rest for a few minutes before slicing into strips.
- To assemble, stack slices of chicken with avocado, cherry tomatoes, and red onion on a plate. Garnish with fresh cilantro and serve with lime wedges on the side.
Notes
For an even more intense flavor, try to marinate the chicken for 1-2 hours. Use a meat thermometer to ensure the chicken doesn’t overcook.
