Instant Pot Spaghetti and Meatballs

Instant Pot Spaghetti and Meatballs

  • Total Time: 20 minutes
  • Diet: Standard

Ingredients

Scale
  • 1 pound spaghetti noodles (broken in half)
  • 1 pound pre-cooked meatballs (frozen or fresh)
  • 24 ounces marinara sauce (one jar)
  • 36 ounces water (use the empty sauce jar to measure 1.5 jars of water)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Grated parmesan cheese and fresh parsley for garnish

Instructions

  1. Drizzle the olive oil into the bottom of the Instant Pot liner to prevent sticking. Place the meatballs in an even layer at the bottom. Break the spaghetti noodles in half and scatter them over the meatballs. Ensure you layer the noodles in a “criss-cross” or “staggered” pattern rather than one big clump; this prevents the pasta from sticking together during the cooking process.
  2. Pour the jar of marinara sauce over the pasta. Fill the empty sauce jar with water (about 1.5 times the volume of the sauce) and pour it over the top. Add the garlic powder, oregano, salt, and pepper. Use a wooden spoon to gently press the noodles down so they are mostly submerged in the liquid, but do not stir the ingredients. Keeping the sauce on top helps prevent the “Burn” notice.
  3. Secure the lid and set the valve to the “Sealing” position. Select the Manual or Pressure Cook button and set the timer for 8 minutes on High Pressure. Once the timer beeps, perform a “Quick Release” by carefully turning the valve to the “Venting” position. Wait for the silver pin to drop before opening the lid.
  4. When you first open the lid, the sauce may look a bit watery—this is normal. Use a pair of its tongs or a large fork to gently stir the spaghetti and meatballs. This incorporates the starches from the pasta into the sauce, thickening it instantly. Let the pasta sit for 3 to 5 minutes to allow the sauce to fully tighten and coat the noodles.
  5. Twirl a generous portion of spaghetti onto a plate and top with several meatballs. Garnish with plenty of grated parmesan cheese and a sprinkle of fresh chopped parsley. Serve immediately while hot.
