Jalapeño Cranberry Dip

Ingredients

  • 12 ounces fresh cranberries (washed and picked through)
  • 2 large jalapeños (seeded and finely minced)
  • 1/4 cup green onions (chopped)
  • 1/2 cup fresh cilantro (chopped)
  • 3/4 cup granulated sugar
  • 2 tablespoons lime juice
  • 1/4 teaspoon salt
  • 16 ounces cream cheese (two 8-ounce blocks, softened)
  • Crackers or baguette slices for serving

Instructions

  1. Place the fresh cranberries in a food processor. Pulse them until they are coarsely chopped. Do not over-process them into a paste.
  2. Transfer the chopped cranberries to a medium mixing bowl.
  3. Add the minced jalapeños, green onions, cilantro, sugar, lime juice, and salt to the bowl with the cranberries.
  4. Stir everything together until the sugar is well distributed.
  5. Cover the bowl and place it in the refrigerator for at least 2 hours. This allows the cranberries to sweeten and the flavors to blend.
  6. When you are ready to serve, spread the softened cream cheese in an even layer on a serving platter or in a shallow bowl.
  7. Strain any excess liquid from the cranberry mixture if desired, then pour the salsa over the cream cheese layer.
  8. Serve immediately with your favorite crackers or bread.
