- 1 cup low-fat cottage cheese
- 2 large eggs
- 1 tablespoon honey or maple syrup
- 1 teaspoon vanilla extract
- Zest of one fresh lemon
- 1 tablespoon fresh lemon juice
- 1 cup oat flour (or all-purpose flour)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 cup fresh blueberries
- Non-stick cooking spray (halal-certified)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a mini muffin tin with non-stick cooking spray.
- In a blender or food processor, combine the cottage cheese, eggs, honey, vanilla extract, lemon zest, and lemon juice. Blend until the mixture is completely smooth and creamy.
- In a medium mixing bowl, whisk together the flour, baking powder, and salt.
- Pour the wet blender mixture into the bowl with the dry ingredients. Stir gently with a spatula until just combined. Do not overmix, or the bites will become tough.
- Gently fold in the fresh blueberries using a spatula.
- Scoop the batter into the prepared mini muffin tin, filling each cup about 3/4 of the way full.
- Bake for 15 to 18 minutes, or until the tops are set and a toothpick inserted into the center comes out clean.
- Let the bites cool in the tin for 5 minutes before removing them to a wire rack. Serve warm or at room temperature.
