Loaded Beef and Potato Bake – Easy Family Dinner Recipe

Loaded Beef and Potato Bake – Easy Family Dinner Recipe

  • Total Time: 1 hour
  • Diet: Gluten-Free

Ingredients

Scale
  • 2 lbs Russet or Yukon Gold potatoes, peeled and cut into 1-inch cubes
  • 1 lb lean ground beef (90/10 preferred)
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (plus more to taste)
  • 1/2 teaspoon black pepper
  • 2 cups sharp cheddar cheese, shredded
  • 1/2 cup cooked bacon bits
  • 1/4 cup sour cream (for serving)
  • 3 green onions, sliced (for garnish)

Instructions

  1. Step 1: Prep and Roast the Potatoes Preheat your oven to 400°F (200°C). Grease a 9×13 inch baking dish with non-stick spray. In a large bowl, toss the cubed potatoes with olive oil, smoked paprika, salt, and pepper until evenly coated. Spread the potatoes in a single layer in the baking dish. Bake for 25–30 minutes, or until the potatoes are tender and starting to brown at the edges. Remove the dish from the oven but keep the heat on.
  2. Step 2: Brown the Beef and Aromatics While the potatoes are roasting, place a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spatula. Once the beef is nearly cooked through, add the diced onions and minced garlic. Saut9 for another 5 minutes until the onions are translucent and fragrant. Drain any excess grease from the pan to keep the dish from becoming too oily.
  3. Step 3: Combine and Assemble Once the potatoes are roasted, pour the beef and onion mixture directly over the potatoes in the baking dish. Use a spoon to gently toss them together so the flavors meld. Spread the mixture out evenly. Sprinkle the shredded cheddar cheese and the cooked bacon bits over the top of the beef and potatoes.
  4. Step 4: Final Bake and Garnish Return the baking dish to the oven and bake for an additional 10–15 minutes, or until the cheese is completely melted and bubbling. For a crispier topping, you can broil it for the last 2 minutes. Remove from the oven and let it sit for 5 minutes before serving.
  5. Step 5: Plating Scoop generous portions onto plates. Top each serving with a dollop of sour cream and a sprinkle of fresh green onions. Serve warm and enjoy your effortless family dinner!
