- 3 large sweet potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons olive oil (or melted butter)
- 2 tablespoons pure maple syrup
- 1 teaspoon ground cinnamon
- 1/2 teaspoon sea salt
- 1/4 teaspoon ground black pepper
Instructions
- Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or silicone mat for easy cleanup.
- Place the cubed sweet potatoes into a large mixing bowl.
- Drizzle the olive oil and maple syrup over the potatoes. Sprinkle with cinnamon, salt, and black pepper.
- Toss everything together with a large spoon or your hands until every piece of potato is evenly coated with the mixture.
- Spread the sweet potatoes onto the prepared baking sheet in a single layer. Make sure they are not crowded so they can roast instead of steam.
- Bake for 25 to 30 minutes. Use a spatula to toss and flip the potatoes halfway through the cooking time.
- The potatoes are done when they are fork-tender and the edges are starting to turn golden brown and crisp.
- Remove from the oven and let them cool for a few minutes before serving.
