- 2 pounds fresh carrots (whole or sliced into sticks)
- 3 tablespoons pure maple syrup
- 2 tablespoons olive oil or melted unsalted butter
- 1/2 teaspoon fine sea salt
- 1/4 teaspoon black pepper
- 1 teaspoon fresh thyme leaves (optional for garnish)
- 1/2 teaspoon garlic powder (optional)
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or silicone mats to prevent sticking and make cleanup easy.
- Wash and peel the carrots. If they are very thick, slice them in half lengthwise or cut them into 3-inch batons so they cook evenly.
- In a large mixing bowl, whisk together the maple syrup, olive oil (or melted butter), salt, pepper, and garlic powder if using.
- Add the carrots to the bowl and toss them thoroughly with your hands or a spatula. Ensure every carrot is glistening with the glaze.
- Spread the carrots out on the prepared baking sheet in a single layer. Do not crowd them, as they need space to roast rather than steam.
- Place the tray in the center of the oven and roast for 20 to 25 minutes. Halfway through, use tongs to turn the carrots so they brown on all sides.
- Roast for another 5 to 10 minutes until the carrots are tender and the glaze has thickened into a sticky coating.
- Remove from the oven and transfer to a serving dish. Sprinkle with fresh thyme or parsley while they are still hot for a fresh aroma.
