- 2 cups old-fashioned rolled oats (do not use instant oats)
- 1/2 cup chopped pecans, toasted for extra flavor
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 2 cups milk of your choice (dairy, almond, or oat milk work great)
- 1/3 cup pure maple syrup
- 1 large egg
- 2 tablespoons melted butter or coconut oil
- 1 teaspoon pure vanilla extract
Instructions
- Preheat your oven to 375°F (190°C). Grease an 8×8-inch square baking dish with a little butter or oil.
- In a medium bowl, stir together the rolled oats, toasted pecans, baking powder, cinnamon, and salt.
- In a separate large bowl, whisk together the milk, maple syrup, egg, melted butter, and vanilla extract until well combined.
- Add the dry oat mixture into the wet ingredients. Stir gently until everything is evenly moistened.
- Pour the mixture into your prepared baking dish. Spread it out evenly with a spoon. Sprinkle a few extra pecans on top if you like.
- Bake for 35 to 40 minutes. The edges should be golden brown, and the center should be set.
- Remove from the oven and let it cool for 5 minutes before slicing and serving.
