- 1/2 cup rolled oats (old-fashioned oats)
- 3/4 cup milk (dairy, almond, oat, or coconut milk)
- 1 tablespoon pure maple syrup
- 2 tablespoons chopped pecans
- 1 teaspoon chia seeds
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon pure vanilla extract (non-alcoholic)
- Pinch of salt
- Extra pecans and maple syrup for topping
Instructions
- In a clean glass jar or airtight container, add the rolled oats, chia seeds, ground cinnamon, and a pinch of salt. Stir these dry ingredients together.
- Pour in the milk, pure maple syrup, and vanilla extract.
- Add the chopped pecans to the mixture.
- Stir everything very well, making sure no oats are stuck at the bottom and the chia seeds are evenly distributed.
- Secure the lid on the container and place it in the refrigerator for at least 6 hours, or ideally overnight.
- The next morning, remove the lid and stir the oats. If the mixture is too thick, splash in a little extra milk to reach your desired consistency.
- Top with a handful of extra pecans and a drizzle of maple syrup before serving.
