Ingredients

- 2 Salmon fillets
- 1/2 cup Olives (pitted and chopped)
- 1 Citrus (such as oranges and lemons, sliced)
- 1/4 cup Fresh herbs (such as parsley or dill)
- 2 tbsp Olive oil
- 1 tsp Salt
- 1/2 tsp Pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Place the salmon fillets on a baking sheet lined with parchment paper.
- Drizzle olive oil over the salmon, and season with salt and pepper.
- Arrange the sliced citrus and chopped olives on top of the salmon.
- Sprinkle fresh herbs over everything.
- Roast in the preheated oven for 20-25 minutes, or until the salmon is cooked through and flakes easily with a fork.
- Serve warm and enjoy!
