- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 3/4 cup unsalted butter, softened
- 1/2 teaspoon salt
- 4 large eggs
- 1 1/2 cups light corn syrup (or maple syrup for a deeper flavor)
- 1 1/2 cups granulated sugar (for the filling)
- 3 tablespoons unsalted butter, melted
- 1 1/2 teaspoons vanilla extract
- 2 1/2 cups chopped pecans
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan or line it with parchment paper for easy removal.
- In a medium bowl, combine the flour, 1/2 cup sugar, 3/4 cup softened butter, and salt. Mix until the mixture looks like coarse crumbs.
- Press the crumb mixture firmly into the bottom of your prepared baking pan.
- Bake the crust for 15 to 18 minutes, or until the edges are just starting to turn a very light golden brown.
- While the crust bakes, prepare the filling. In a large bowl, whisk the eggs, corn syrup, 1 1/2 cups sugar, melted butter, and vanilla extract until smooth.
- Stir in the chopped pecans until they are well coated with the liquid.
- Once the crust is ready, remove it from the oven and immediately pour the pecan mixture over the hot crust. Spread it out evenly.
- Return the pan to the oven and bake for another 30 to 35 minutes. The edges should be set, and the center should have a slight jiggle.
- Remove the pan from the oven and place it on a wire rack. Let the bars cool completely in the pan before cutting them into squares.
