Ingredients
Scale
- 1 (6 to 8 pound) standing beef rib roast (halal)
- 1/2 cup unsalted butter, softened
- 6 cloves garlic, minced
- 2 tablespoons fresh rosemary, finely chopped
- 1 tablespoon fresh thyme, finely chopped
- 2 tablespoons kosher salt
- 1 tablespoon cracked black pepper
- 1 teaspoon onion powder
Instructions
- Remove the beef roast from the refrigerator at least 2 hours before cooking. Let it sit on the counter to reach room temperature for even roasting.
- Preheat your oven to 450°F (230°C).
- In a small bowl, combine the softened butter, minced garlic, rosemary, thyme, salt, pepper, and onion powder. Mix until it forms a smooth paste.
- Pat the roast completely dry with paper towels. Place the roast in a heavy roasting pan with the fat side facing up.
- Rub the garlic herb butter mixture over the top and sides of the roast, coating it thoroughly.
- Place the roast in the oven and bake for 15 minutes at 450°F to create a nice crust.
- Reduce the oven temperature to 325°F (165°C). Continue roasting until a meat thermometer inserted into the thickest part reaches 120°F for rare or 130°F for medium-rare. This usually takes about 12 to 15 minutes per pound.
- Remove the roast from the oven and transfer it to a cutting board. Tent it loosely with foil.
- Let the meat rest for at least 30 minutes. The internal temperature will rise about 5 to 10 degrees during this time.
- Carve the roast by cutting against the grain and serve immediately.
- Cook Time: 4 hours 30 minutes
