Protein Breakfast Burritos

Protein Breakfast Burritos

  • Total Time: 30 minutes
  • Diet: High-Protein, Low-Carb

Ingredients

Scale
  • 4 large whole wheat or high-protein tortillas
  • 4 large eggs + 1/2 cup liquid egg whites
  • 1/2 lb lean ground turkey or chicken sausage
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup red bell pepper, finely diced
  • 1/4 cup red onion, minced
  • 1 cup fresh baby spinach, chopped
  • 1/2 cup shredded low-fat cheddar cheese
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: Sliced avocado and salsa for serving

Instructions

  1. Step 1: Preparation: Start by dicing your vegetables and rinsing the black beans. Whisk the four whole eggs and the egg whites together in a medium bowl until well combined. Season the egg mixture with salt, pepper, and the smoked paprika. Set your tortillas aside on a flat surface so they are ready for assembly.
  2. Step 2: Cooking the Protein and Veggies: Place a large non-stick skillet over medium-high heat. Add the ground turkey or chicken sausage to the pan, breaking it up with a spatula. Cook until the meat is browned and no longer pink. Add the diced red onions and bell peppers to the skillet and sauté for another 3 to 4 minutes until the vegetables soften. Stir in the chopped spinach and black beans, cooking just until the spinach wilts.
  3. Step 3: Scrambling the Eggs: Lower the heat to medium. Pour the egg mixture directly into the skillet with the meat and vegetables. Use a spatula to gently fold the eggs into the mixture. Continue cooking, stirring frequently, until the eggs are set but still slightly moist. Avoid overcooking the eggs, as they will dry out during the reheating process later. Remove the skillet from the heat and stir in the shredded cheese so it begins to melt.
  4. Step 4: Assembling and Rolling: Distribute the egg and protein mixture evenly across the center of the four tortillas. If you are eating them immediately, add fresh avocado slices or a dollop of salsa now. To fold, tuck in the sides of the tortilla first, then roll tightly from the bottom up. For a crispy finish, you can place the rolled burritos back on the skillet for 30 seconds per side until the tortilla is golden brown.
