Pumpkin Chili with Ground Beef

  • 1 pound lean ground beef
  • 1 medium yellow onion, diced
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 can (15 ounces) pure pumpkin puree (not pumpkin pie filling)
  • 1 can (14.5 ounces) diced tomatoes, with juices
  • 1 can (15 ounces) kidney beans, rinsed and drained
  • 1 can (15 ounces) black beans, rinsed and drained
  • 2 cups beef broth (low sodium)
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt (or to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Heat the olive oil in a large pot or Dutch oven over medium heat.
  2. Add the ground beef, diced onion, and chopped bell pepper to the pot. Cook until the beef is browned and the vegetables are soft, about 7 to 8 minutes. Break the meat into small crumbles as it cooks.
  3. Add the minced garlic and cook for another 1 minute until it smells fragrant.
  4. Carefully drain any excess fat from the pot to keep the chili light.
  5. Stir in the pumpkin puree, diced tomatoes with their juice, kidney beans, and black beans.
  6. Pour in the beef broth and stir everything together until well combined.
  7. Add the chili powder, cumin, smoked paprika, salt, and black pepper. Stir well to distribute the spices.
  8. Bring the mixture to a gentle boil, then turn the heat down to low.
  9. Cover the pot and let the chili simmer for 20 to 30 minutes. Stir occasionally to prevent sticking.
  10. Taste the chili and add more salt or pepper if needed. Serve hot with your favorite toppings.
