- 1 cup plain Greek yogurt (full fat or low fat both work well)
- 1/2 cup canned pumpkin puree (ensure it is 100% pure pumpkin, not pie filling)
- 1 tablespoon maple syrup or honey
- 1/2 teaspoon pumpkin pie spice
- 1/4 teaspoon vanilla extract
- 1/2 cup crunchy granola
- 2 tablespoons chopped pecans or walnuts
- A pinch of ground cinnamon for dusting
Instructions
- In a small mixing bowl, combine the pumpkin puree, maple syrup (or honey), pumpkin pie spice, and vanilla extract. Stir everything together until the mixture is smooth and the spices are well incorporated.
- Take a clean, clear glass or a small mason jar. Spoon about half of the Greek yogurt into the bottom of the glass to form the first layer.
- Spoon half of your prepared pumpkin mixture over the yogurt layer. Use the back of the spoon to gently spread it to the edges.
- Sprinkle about half of the granola over the pumpkin layer to add a nice crunch in the middle.
- Add the remaining Greek yogurt as the next layer, followed by the rest of the pumpkin mixture.
- Top the final pumpkin layer with the remaining granola and the chopped pecans or walnuts.
- Finish with a light dusting of ground cinnamon on top. Serve immediately while the granola is still very crunchy.
